A year ago, the price of large molds were around $2each. This year, the best I could find was a 12pk for $11.99.
Nevertheless, until I get to a point where I’m baking panettone en-masse, I’ll continue making my own.
Here’s how I do it.
I have pairs of cardboard circles. One about an inch larger than the other (all of the way around).
I draw a circle around the larger one and cut it out. Then, I center the smaller circle in the middle and fold the outside around it.
I measure and cut a rectangular strip 4inches longer than the circumference of the smaller circle, and however tall I need it to be (3, 4, or 5 inches).
This is glued together to form a ring, and the pre-folded circle gets glued inside.
It can be helpful to use a container to hold the shape of your mold as it dries.
And remember to pre-pierce holes before placing your dough in the mold! When your bread is fresh out of the oven it will be too soft to withstand the pressure.
What kind of glue should I use to make my own mold?
I used a flour/water/sugar boiled glue so that it’s non-toxic.
